1/2 cup pumpkin purée
1/2 cup almond flour
1 tbsp Baru Baron’s Baru Flour
1 tsp baking powder
1 tsp cinnamon
1. Whisk eggs, pumpkin and vanilla in a bowl.
2. Add dry ingredients and mix until combined. At this point you could even add a few blueberries or chocolate chips but this is OPTIONAL
3. Place 1/3 cup of the batter in a pan with some melted coconut oil. Cook over medium heat until bottom is browned, flip the flapjack and finish cooking it.
4. Makes 6 medium sized and filling pancakes!
