BARU TABBOULEH SALAD

Baru Seeds Tabbouleh Salad

Ingredients:

1 cup chopped head of cauliflower
1 firm Roma tomato, very finely chopped
½ onion, chopped in tiny cubes
½ English cucumber (hothouse cucumber), very finely chopped
2 tbsp fresh mint leaves, stems removed, washed, well-dried, very finely chopped
½ garlic clove, grated
3 chopped apricots
10 peeled, chopped Baru Baron’s Baru Seeds
Juice of ½ lime
Olive oil to taste (2 tbsp is great)
Salt and pepper to taste

Instructions:

Mix everything in a bowl, and let it rest for 30 min in the fridge before serving.
