By @drtaliand – “Seed squares! On a journey to make chocolate covered coconut seed clusters (like the kind you find at Costco but without all the sugar), I often stumble upon not-quite-there-but-hey-this-is-still-a-good-snack territory.
As always these are keto, sugar free, paleo, dairy, gluten and soy-free and this time even plant-based. They make a good protein and fat-rich snack.”
- 2 cups of pumpkin seeds,
- cacao nibs to taste
- chia seeds to taste
- ground flax to taste
- Baru flour to taste
- Baking chocolate
- Coconut flakes
- Cover with water and let sit for 15 minutes. Preheat oven to 400 degrees. Spread over a baking sheet, bake for 60 minutes.
- Melt unsweetened baking chocolate with coconut oil in a saucepan. When seeds are baked, pour on top. Sprinkle with coconut flakes.
- If you want these sweet (and not bitter the way I love things), add stevia drops and/or monk fruit to keep it keto. If you don’t mind sugar, sweeten chocolate with maple syrup.
