Baru Seeds Tabbouleh Salad

Baru Seeds Tabbouleh Salad

Ingredients

  • 1 cup chopped head of cauliflower
  • 1 firm Roma tomato, very finely chopped
  • ½ onion, chopped in tiny cubes
  • ½ English cucumber (hothouse cucumber), very finely chopped
  • 2 tbsp fresh mint leaves, stems removed, washed, well-dried, very finely chopped
  • ½ garlic clove, grated
  • 3 chopped apricots
  • 10 peeled, chopped Baru Baron's baru seeds
  • Juice of ½ lime
  • Olive oil to taste (2 tbsp is great)
  • Salt and pepper to taste

Instructions

  1. Mix everything in a bowl, and let it rest for 30 min in the fridge before serving. Yum!
